My Favorite Meal….Today


You know those days when you get home and don’t feel like cooking but you want something tasty and wholesome? Here’s my go-to meal – it’s my new favorite meal….OK perhaps “favorite” and “meal” aren’t quite accurate but you know what I mean. I microwave a Morningstar Garden Veggie Patty then pop it into a frying pan for a little crispiness…on that frying pan is an egg doing its own crispy thing. Yes, it’s the whole egg and not just the whites. I know it’s healthier not to eat the yolk but it’s tasty and it seems like such a waste to throw it out. Once they’re both done I throw some sharp, organic cheddar cheese on the burger and top it with the egg for crispy, gooey perfection! My side here is a local apple but sometimes I thaw some frozen edamame (my daughter loves them too) …because they’re fun to eat and a great way to get extra protein.

Next comes dessert of Stoneyfield Plain Yogurt, drizzled with honey and a bunch of whole almonds. This is one of those desserts that tastes like you’re being bad but really, you’re being oh so good!

Then, if I’m feeling extra decadent, I go for a nibble (ha, ha who am I kidding, it’s never a nibble) of Green and Black’s Organic Dark Chocolate Mint Bar – just out of the fridge…wait, are those angels singing? I do believe it is. This may be the best chocolate bar ever!
