Refurnish Your Thanksgiving Leftovers

Now that the deliciousness of Thanksgiving is behind us, I look forward to all the ways to use the leftover turkey, potatoes and squash. Here are some of my favs.

This year, as last, I found a local Turkey Farm that sells all natural free-range turkeys. Do a search in your local area- you’ll notice the difference in taste from the standard Butterball, you’re eating a healthy bird and helping the local economy- all good things, no?

My favorite recipe for leftover turkey is Turkey Tetrazzini. It’s such a yummy comfort food and so doesn’t taste like you’re eating leftovers. Once I have removed the meat from the bones for the Tetrazzini, I’ll then boil the bones to make a huge pot of soup. I save the broth in smaller containers in the freezer and pull them out as needed.

Like pasta, I usually cook way too many potatoes when I cook. No worries. I use the leftover mashed potatoes to make potato latkes. Ever had them? They are crispy deliciousness. They’re good plain with sour cream or you can fancy them up by adding smoked salmon, capers and red onion…ok, I’m hungry now!

I just stumbled upon this recipe for Sweet Potato dip and am wishing I had some leftover sweet potatoes…maybe next year. I’d love to hear about your favorite leftover dishes.
